蔡戡（1141—1182），南宋官吏。字定夫，福建仙游人，蔡襄五世孙，蔡伸嫡孙。始居武进，初以荫补溧阳尉，宋孝宗乾道二年（1166）进士，累官宝谟阁直学士。七年，召试馆职授秘书省正字。八年，知江阴军。历广东、京西转运刮宫，广东、湖南提刑。淳熙十年（1183）由湖广总领徙建康府总领，寻徙淮西总领。光宗绍熙元年（1190）为浙东提刑，召除中书门下检正诸房公事。五年，兼知临安府，再任湖广总领。宁宗庆元二年（1196）知隆兴府。嘉泰元年（1201）知静江府兼广西经略安抚使。勤政爱民，赢得清声。生性洒脱，不肯与权奸为伍。韩侂胄掌权后，便告老还乡。才华出众，著作甚丰。
